A Taste of History at St Mawes Bakery

St Mawes Bakery is steeped in history, and that heritage can be seen right down to the traditional equipment we still use today.

Inside our bakery, you will find a vintage dough divider and press, a wonderfully heavy piece of cast iron equipment that has an important job to do. It cuts the dough into 36 equal pieces, with two pieces making up the pastry for each pasty.

This helps us ensure that every pasty starts with the same amount of pastry, giving us a consistent size before they are filled with fresh ingredients and baked to perfection.

Of course, our pasties are handmade, so they will never look exactly the same. That is part of their charm and a reminder that each one is lovingly made by hand. But thanks to our trusty vintage dough divider, we know that the amount of pastry is consistent in every pasty.

It is a wonderful example of how traditional methods and equipment continue to play an important part in making our pasties today.
